To answer my own question…
Seems like they are all fabric except for the 140A’s.
They made 525 of the 140A model according to this AOPA article.
Your research is correct. All 140’s were fabric wings originally. Except the 140A’s which came out around 1950(maybe as early as 1949). A lot of the straight 140’s have since been converted to Aluminum covered wings to do away with the hassle of recovering wings. The covering is only aerodynamic not structural, so it kinda makes sense to me to swap it over. Other than weight savings. But 140’s are cruisers where weight is a less of a concern.

Can you do this with any fabric covered airplane?
The fuselage is already metal on 120s and 140. The wings are originally fabric, but many have “metalized” wings

What does that process look like?
Can you just go to Home Depot and get aluminum to sort of bend around the wings where the fabric used to be…
You rivet it into the ribs instead of rib stitching.
